Dinspiration™ for Whole30 compliant / paleo meals
Being on a Whole30 / paleo diet does not have to be boring you just need to be a little creative and bring out your inner boy scout by being well prepared!
You’re allowed bacon, you’re allowed eggs. ‘Nuff said. You can still go out for brunch and just create your own like I did on the right hand side (see Harrison’s of Hove) or make it at home yourself. NEWSFLASH – good scrambled eggs don’t need butter or eggs, just use half a tsp of olive oil (or coconut if you’re so inclined) and add a splash of water in lieu of milk to fluff them up.
I have eaten eggs and avocado on more lunches than I would care to admit because it’s easy and quick. You can, however, knock up a soup like the above in 10 minutes. Popping into town on your lunch break and trying to find something you can eat on the Boots meal deal? Not gonna happen. BE PREPARED!
Now, dinner is my bag, this is where all your creativity and experimenting can come out. All of these were eaten with my boyfriend who wasn’t on Whole30. All of these were delicious. Homemade thai green curry paste? Easy, delicious, cheap.
Homemade pesto is the best thing ever. It’s super easy to make and it’s so, so good. I had the top left hand dinner and made regular mash for the boyfriend. I couldn’t quite face dry mash so I threw in a spoonful of pesto.. LIFE CHANGING.
