Pancake day done Scottish style

We had scotch pancakes, which are called dropscones in Scotland, being down with my heritage (where is the Scottish flag emoticon?) 

We went for the classic toppings, lemon and sugar, golden syrup, caramelised bananas and fresh bananas and skooshy cream 😋 God, I love skooshy cream. It lasted a further 24 hours in our fridge by which time we had both been into the fridge several times for a quick hit. 

Recipe: 8oz self raising flour, 4oz caster sugar, pinch of salt, 2 eggs, 8 tablespoons milk

Whisk ingredients together well, I dropped a touch more milk in too

On a gas job, keep the temperature low and coat the pan with a little butter, drop in pan and turn after a few minutes, repeat repeat repeat repeat!
